I have had chia seeds sitting in my pantry for ages not knowing what to do with them. I tried chia puddings before and found them too grainy and weird. But I got inspired by Valeria Lipovestky’s Instagram to try her recipe and this one really has the consistency of a pudding! The addition of fruits (or fruite compote) makes it such a nice spring/summer breakfast or snack.
Recipe (adapted from VL)
1 can of full fat coconut milk (any brand)
1/4 cup chia seeds
1/2 tsp or 1tsp of vanilla extra
1 tbsp coconut sugar or any other sweetener of choice (I prefer coconut sugar because it is unrefined, but you can also skip the sugar altogether if you’re satisfied with the sweetness from the fruits)
Mix all the ingredients together and let sit overnight. By the next day, it will have thickened to the point of a pudding. I noticed that it gets even thicker after a couple of days (yum!). As you see from the pic below, you can already portion them out into little mason jars so your breakfast is ready the next morning. One batch can go so far as 4-5 breakfasts.
